Either my eyes are crazy or my temp guage went nuts
I just drove 200 miles from Houston to Austin without any problems (and from Austin to Houston two days before). However, today when driving home from work, I start my car and get on the fwy. I then drive at 60 cruising for about 3 miles. As I got off the fwy I noticed my water temp guage going up and down like crazy. It was spattering very fast, faster then I've ever seen a needle go in my life. However, it never went about the halfway mark, it was going from 0 to halfway like crazy. Only a millisecond after I saw it, it stopped. At first I thought it was my eyes, but then it did it again for like 2 seconds. Then as I drove the rest of the way home on surface streets it didn't do it again.
I got out of the car and inspected the engine, nothing seemed odd. The engine and intake manifold were still quite cool, the top of the radiator was very hot, but the fins and front panel were cool, and the over-flow tank was about half full. Obviously I didn't check the thermostat.
Is this guage at all electrical, maybe there's a short and it's just going on/off on/off really fast?

Gauge is electrical. You likely have a corroded or otherwise poor connections at the probe. The temp probe sits in the aluminum coolant pipe just to the right of the engine (towards the air cleaner). I'd remove it and clean the connections thoroughly.
